Falafel

 

While the two worlds, the Palestinian one and the Jew one, are fighting for the primacy of invention of "falafel", famous balls of broad beans, chickpeas, and many spices, we will enjoy these balls with the original recipe.

Ingredients:

2 cups of braod beans

1/2 cup of chickpeas

3 cloves of garlic

5 onions (medium size)

1/2 bunch of coriander

1/2 cup of finely chopped parsley

2 spoons of salt

2 spoons of flour

1 teaspoon of white pepper

1/2 teaspoon of black pepper

1/2 teaspoon of cumin

1/2 teaspoon of bicarbonate

3 teaspoons of yeast for pies

oil for frying

 

The night before, soak the broad beans and the chickpeas. The next day (after 12 hours), drain the beans and put them in the robot (mixer), with all the others ingredients to create a consistent mixture, and let it rest for an hour anda a half. Then, mix all with the hands. Prepare a pan to fry the meatballs that you form with the aid of two spoons. Once golden, serve them with a tomatoes, parsley and mint salad, and some vinegar.
