NAMMURA

Nammura

 

Nammura is a popular sweet which is sold in the street. The seller carried a handcart, on which there were two trays of sweets cut in the forms of small rhombs. To remember the past we will try to prepare this dish with the traditional recipe.

 

Ingredients:

187 gr. of semolina

125 gr. of sugar

1 spoon of bicarbonate

a pinch of salt

250 gr. of yogurt

50 ml. of orange flower water

Some almonds to garnish

Butter for the cake-tin


Ingredients for the sugar syrup (treacle):

200 gr. of sugar

100 ml. of water

3 spoons of orange flower water

Some drops of lemon

1 spoon of butter


Mix the semolina with the bicarbonate, the sugar and the salt.

Add the orange flower water. Add the yogurt, and mix well. Let the mix for an hour.

Prepare the sugar syrup, adding 1 spoon of butter, (let boil the sugar with water and the drops of lemon for no longer than 5 minutes).

Grease a cake tin of 20 cm of diameter with butter. Pour the mixin the cake tin, and level the surface. Garnish with the almonds.

Bake for about 30 minutes at 180 degrees.

Take the mix out of the oven and pour the syrup still warm, bake again for another 5 minutes.

Cool completely, then cut into small rhombs.
